| hey that burek is made in croatia. i see by the label on the yogurt. it's a brand called z'bregov that would mean from hills. and sry to tell you this but baklava is not good in that pic. it has to be cut in triangles |

| just one thing. after analyzing the picture that's not baklava. well at least not the one i meant. that's the greek version. but if you ask me the turkish version is better. i could take one from my mom and translate it if you want it. also the same with ćevapi and burek if you want to. huh guys trading recipes - never thought i'd see the day |

| preparation for burek. if you don't understand sth just ask: Prep Time: 30 minutes Cook Time: 20 minutes Ingredients:
* 1 Tablespoon olive oil * 1 medium yellow onion, peeled and chopped * 1 pound ground beef * 1 teaspoon allspice * 2 teaspoons Hungarian paprika * Salt and freshly ground black pepper * 1 box phyllo pastry sheet (12 inches x 17 inches) * 3/4 cup butter, melted
Preparation: Heat a large frying pan and add the oil. Saute the onion until soft, and then add the ground beef, allspice, paprika, salt, and pepper to taste. Cook until the meat is crumbly but not dry. Cool completely before you continue.
Lay 1 sheet of phyllo dough on the counter. Brush with some of the butter. Place a heaping 1/3 cup of meat mixture acrosss the sheet along the long side, 2 inches from edge. Fold the bottom over the meat mixture and roll into a snake shape. Cut the roll in half and coil each roll into a snail shape. Place on a nonstick baking sheet and butt the end up against the edge of the pan to prevent uncoiling. Brush with additional butter.
Bake in a preheated oven at 375 degrees for 15 to 20 minutes or until just golden.
Keep the remaining sheets of phyllo dough covered with plastic, and work quickly to prevent in from drying out.
Hint on handling phyllo dough: Be sure the dough is at room temperature before you open the box. Place the sheets of dough on a large cookie sheet and cover them with plastic wrap and then a heavy towel. In this way, they will not dry out while you are working with them. Work fast for best results and do not have the butter too hot when brushing the dough |

| Traditional Balkan recipe: Ćevapi - Grilled rolls of minced beef and lamb, served with chopped fresh onion and ''lepinja''
Ingredients for Ćevapi :
* 350g Premium Grade Minced Beef * 150g minced lamb * 2 garlic cloves, minced * 50g onion, minced * 40ml natural mineral water * 20ml oil * hot chili to taste (optional) * pepper to taste * vegata or salt to taste
Method:
1. Combine well all ingredients for Ćevapi. Refrigerate mixture over night. 2. Wet hands with water and shape the mixture into uniform rolls. 3. Cook the Ćevapi on a hot lightly oiled barbecue grill or frypan for 6-10 minutes, turning frequently. 4. Ćevapi can be served on its own or between slices of lepinja.
if you don't want to make your own lepinja you can also take hamburger buns instead. but just in case here's also the recipe for that
Ingredients:
350 g white flour (350 g is a little bit more than 3/4 of one pound flour) 30 g fresh yeast 1 tbs sugar 1 tbs salt 8 oz warm water Little milk (for yeast growing)
Place sugar, salt and yest into warm (not hot milk). Let stand for a few minutes and when yeast dissolves and grows, pour it in your flour. Add warm water and start getting messy. You should knead your dough until it doesn't stick to your fingers. Cover dough with cloth and put it in warm place (for instance near heaters). When your dough grows really well, knead it once again and let stand until it grows completely again. Then, you should knead it some more and sprinkle with some flour. Put it in the greased pan in which you plan to bake it, spread until it's about half inch thick and let stand in your baking pan for about half an dough. Then, put it in your hot oven, which must be turned on on 400-420 F. Bake it until it's golden and put in a tooth pick and check if it's all baked thoroughly. |
